It’s Friday night and after a long day at the gym, school, work and mentoring the last thing I want to do is come home to eat not to mention cook. However, I have a raging hunger headache and don’t have the strength to leave the house again to get something to eat.
Here’s a light healthy (less than 500 calories) meal that only took me 10 minuets to prepare. The noodles was 3 mins in the microwave, chopping and stir-frying the vegetable only took 4 mins and the last 3 mins was spent stir-frying the noodle together with the veggies. Add a little pepper, parsley and soy sauce and you are ready to eat.
